One of my biggest struggles at home that is related to food is how can I get those leftovers eaten, so I looked and looked for the Best Leftover Casseroles Recipes I could find.

Most of the time I cook bigger than what we will eat, because I don’t want anyone that wants seconds to miss out and be hungry.
Which means that we often have left overs after each meal.

Sometimes everyone likes dinner so much, everyone has seconds, and there is nothing left at all. But of course, that doesn’t happen every day.

I believe food is precious, so I try to avoid throwing it away. (Unless is past the expiration date or already went bad. I’m not that crazy).
And because of this, I try to make the most of my leftovers, after all, is just the same food, it just wasn’t eaten right away after being cooked.
Not to mention that is good for the environment to minimize waste, AND it saves money to use all or most of what you buy.

Yet, my intentions to consume those leftovers, aren’t always enough.
Neither my husband, nor my kids really care for reheated food.
And who can blame them, freshly made food tastes way better!

There are some meals that are the exception, like pizza and spaghetti. Everyone loves them, so they don’t mind when is leftover food.

Yet, because we don’t limit ourselves to those dishes, other options tend to stay in the fridge until I eat them because no one else will.
But eating just for the sake of eating, or in this case, for the sake of not wasting, is not that fun. And even made me gain a few more pounds than I am cofortable with, because I eat all the things no one else wants so they won’t be thrown away in the garbage.

Fortunately, I found that re-purposing leftovers into new meals is the answer I was looking for.

First, I can use the leftovers entirely! No waste!

And second, because is a new meal, everyone eats it, not only me.

 

There are various ways to re-purpose leftovers into new meals, but casseroles are my favorite way of re-purposing leftovers.
They are just super easy to make, and usually you just need very few new ingredients to make it.

With these recipes you will be able to use leftover chicken, ham, rice, noodles, veggies, and other ingredients.
